This gives me a chance to share the husband’s pictures from our visit here two years ago.
This time though we are here for slightly longer and in the meantime, I do not have an oven. Constraints, creativity, and all that good stuff has forced me to go back to messing about with mug cakes. I genuinely prefer a proper big cake, but this one is sooooo good. I even got fancy once and poured on some chocolate sauce.
The other thing I realized is “mug” cakes comes out better when made in a cereal bowl. Full credit for this recipe goes to tablefortwo and it came highly recommended by Suzy. Aunty Jen, you should definitely give this one a go. First attempt was perfect.
Process In a large cereal bowl or mug, using a fork mix thoroughly 1/4 cup & 2 Tablespoons flour, 2 Tablespoons sugar, 1/4 teaspoon baking powder and 1/8 teaspoon salt.
Make a well in the centre and pour in the 1/4 cup & 2 Tablespoons milk, 1 Tablespoon vanilla extract and 2 Tablespoons melted butter.
Combine the wet and dry ingredients until it is completely free of lumps. (When using a mug, I found a butter knife helped smoosh the lumps.)
The microwave here is 1,000 watts and so it took about 2 minutes to bake. A 950 watt microwave will 2 minutes and 10 seconds to cook and so on.
