



Wondering what to do with that leftover pumpkin your mum packed for you to take home? Or are you craving a warm moist spiced cake? If you can get your hands on some pumpkin or butternut, boil, steam, or roast it and then blend it into a puree and bake.

Pumpkin Spice Cake
Ingredients
- 1 cup sugar
- 1/2 cup butter
- 1/2 cup oil
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 1/3 cup blended pumpkin
- 2 teaspoons cinnamon
- 1/2 teaspoon ginger
- 1 teaspoon mixed spice
- 3 1/4 cups all purpose flour
- 1 teaspoon bicarbonate of soda
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup mala or butter milk
Directions
Grease a loaf tin and dust with flour.Preheat oven to 170°C or 350°F.
In a large bowl using an electric mixer, cream 1 cup sugar with 1/2 cup butter. When combined add the 1/2 cup of oil and 1 teaspoon of vanilla next. Beat in the 3 eggs one at a time until completely absorbed. Add the 2 teaspoons cinnamon, 1/2 teaspoon ginger, and 1 teaspoon mixed spice. Finally into the wet ingredients, add 1 1/3 cup of mashed pumpkin.
In a separate bowl, mix 3 1/4 cups all purpose flour, 1 teaspoon bicarbonate of soda, 1 1/2 teaspoons baking powder, and 1/4 teaspoon salt. Whisk to combine.
For the next stage, start and finish with the flour.
Into the butter mixture, pour in 1 cup of flour and 1/2 cup of buttermilk/mala. Follow with the second cup of flour and the remaining 1/2 cup of buttermilk/mala. Finally mix the third cup of flour. It is a fluffy batter.
Spoon the batter into a large baking tin or into two loaf tins. Bake for 30-40 minutes. Half way through the baking time, rotate the pan front to back.
It is ready when a knife inserted into the center comes out clean.
