Supper in 15 minutes or less

We all have those days when we wish for dinner to be ready quickly and with minimal effort. Two constants seemed to come up when asking friends what their quick meal options are: spaghetti/pasta in various forms and eggs with everything. The easiest salad in the world is a tomato salad, or a tomato and cucumber salad.

  1. Spaghetti carbonara
  2. Pasta pesto
  3. Spaghetti with garlic and red pepper flakes
  4. Spaghetti with any vegetables really
  5. Spaghetti and sausage sauce
  6. Ugali and scrambled eggs (with mala or kachumbari)
  7. Frittata or an omelette and a salad
  8. Microwave jacket potatoes and eggs or sausages and a salad
  9. Leftover rice with pan-fried fish fillet
  10. Leftover rice and pre-boiled or canned beans (RnB)
  11. Grilled cheese sandwiches
  12. Nachos
  13. Asian fried rice

If you are really tired, I have seen some people mix whatever vegetables they have on hand into the beaten eggs, pour the entire mixture in a pan and put it straight in the oven for about 15 minutes. Dinner is served.

Microwaved Jacket Potatoes

Some microwaves already have a jacket potato setting. But if yours does not, microwave on high for 5 minutes and if after inserting a knife it’s still not cooked, you can microwave it again for another 5 or less minutes. Serve with an egg and sliced tomatoes.
