Hi! How was your week? Flash back Friday to Swaziland. Swaziland was not in the itinerary, but when visiting Mozambique for longer than a month, one is required to leave and re-enter the country after 30 days. Our visa run turned out to be a spontaneous fun road trip to Swaziland.
We had lunch at this cute little restaurant that was nestled around different artsy shops, including Gone Rural (I am not sure of the name of the place – oops). I loved the colourful souvenirs that are so typical of Southern Africa. House on Fire hosts the annual 3 day Bushfire International Music Festival.
But back to reality and let’s talk about our weekend baking plan. This chocolate icing/frosting put simply, is the bomb! It is pretty easy and tastes amazing.
The Chocolate Icing You Need
Ingredients
- 3 Tablespoons melted butter
- 1/4 cup cocoa powder
- 1/4 cup milk
- 1 1/4 cups sifted icing sugar (powdered/confectioners)
- 3/4 teaspoons vanilla extract
Directions
In a large bowl, using a wooden spoon, combine the melted butter, vanilla and cocoa powder until smooth and free of lumps.Add in the milk and icing sugar alternately, creaming until it gets to spreading consistency. Add more milk, if necessary.
This recipe can be doubled and I believe even tripled or quadrupled.
