She has a variety of flours, all neatly labelled. There are containers with rice flour, cassava flour, coconut flour, arrow-root (taro) flour, buckwheat etc. She happily experiments and mixes them up—usually eyeballing it (anapima na macho)—until she gets the consistency just right.

Breakfast for dinner

On a Friday evening, tired after a long week and not feeling sufficiently inspired to cook, what better meal than pancakes for dinner. (True, fries would be a plan but we are trying to be healthy here.) And on that happy note, Rita substituted the flour in the pancake recipe here and had g-f fluffy pancakes for dinner. They are so easy to make, you can mix them and watch tv at the same time.

Fluffy Gluten-free Pancakes


Ingredients

  • 1 cup rice flour
  • 1/2 cup coconut flour or cassava flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 2-3 Tablespoons sugar
  • 1/4 teaspoon salt
  • 1 1/2 cups mala (buttermilk) or yoghurt
  • 4 large eggs
  • 2 Tablespoons melted butter or oil
  • 1/2 teaspoon guar gum

Directions

In a large bowl, whisk together the 1 cup rice flour, 1/2 cup cassava flour or coconut flour, 2 teaspoons baking powder, 1/2 teaspoon bicarbonate of soda, 2-3 Tablespoons of sugar and 1/4 teaspoon salt.

Make a well in the centre and pour in the 1 1/2 cups of mala (buttermilk), 4 eggs and 2 Tablespoons melted butter or oil.

Finally, add the 1/2 teaspoon guar gum.

Quickly, lightly mix the wet ingredients into the flour until just combined. (It should not be a smooth mixture. There should be lumps in the batter.)

Place a nonstick pan over medium-low heat. Grease it with oil. Drop about a 1/4 cup full, or whatever amount you prefer of batter onto the medium hot pan. Once bubbles form, flip the pancakes once and continue cooking 1 to 2 more minutes until the pancakes are cooked through.

Serve immediately with whatever you have: jam, butter, honey, maple syrup, bananas, strawberries, ice cream  …
